HERB BUTTERS
Begin by creaming softened, lightly salted butter,
then adding finely cut or minced herbs. Cream them together and let them stand
at room temperature for about one hour. If you like, a teaspoonful of lemon
juice may be added to bring out the flavor of the herbs. Store this in tightly
covered containers in the refrigerator. The basic proportions used when making
herb butters are 1/4 pound butter to 1 tablespoon herb to 1 teaspoon lemon juice.
